Ingredients

  • teaspoons capers drained
  • pound flank steak 
  • 0.5 cup cilantro leaves fresh packed
  • clove garlic chopped
  • 0.8 cup olive green pitted rinsed drained
  • 0.3 cup olive oil 
  • teaspoons red wine vinegar 
  • servings salt

Directions

  1. Combine olives, 1/4 cup oil, cilantro, capers, garlic and vinegar in a food processor and process until blended.
  2. Transfer to a bowl.
  3. Heat a gas grill on high. Rub steak with 1 Tbsp. olive oil, sprinkle with salt and grill, turning once, 8 to 10 minutes total for medium-rare.
  4. Transfer to a cutting board, tent with foil and let rest 5 minutes. Slice against the grain.
