  • cloves garlic finely chopped
  • teaspoons thyme leaves dried
  • teaspoon brown sugar packed
  • teaspoon ground allspice 
  • 0.5 teaspoon salt 
  • 0.5 teaspoon pepper black
  • 0.3 teaspoon ground pepper red (cayenne)
  • 0.3 teaspoon sage dried crushed
  • lb pork loin bone-in
  • medium mangos peeled chopped cut in half lengthwise, seed removed, and (1 cup)
  • 0.3 cup onion red finely chopped
  • tablespoon mint leaves dried fresh finely chopped
  • teaspoons jalapeno finely chopped
  • tablespoons juice of lime 
  • 0.1 teaspoon salt

Directions

  1. In small glass or plastic bowl, mix jerk seasoning ingredients. Rub evenly on both sides of pork. Cover; refrigerate at least 30 minutes but no longer than 1 hour to blend flavors.
  2. Meanwhile, in small bowl, mix salsa ingredients; cover and refrigerate until serving time.
  3. Heat gas or charcoal grill.
  4. Place pork on grill over medium heat. Cover grill; cook about 15 minutes, turning once, until no longer pink when cut near bone and meat thermometer inserted in center reads 160°F.
  5. Serve pork with salsa.
