  • ounce bottled clam juice 
  • teaspoon fish sauce (such as nam pla or nuoc nam)
  • tablespoons cilantro leaves fresh divided chopped
  • teaspoons ginger fresh minced peeled
  •  garlic clove pressed
  • tablespoons spring onion divided minced
  • tablespoons juice of lime fresh
  • 24 ounce mahi-mahi 
  • teaspoons serrano chiles minced seeded
  • cup coconut milk unsweetened

  1. Prepare barbecue (medium-high heat).
  2. Combine first 6 ingredients in mediumskillet.
  3. Add 1 to 2 teaspoons serrano chile,depending on level of heat desired; boiluntil sauce thickens slightly and is reducedto generous 3/4 cup, 8 to 9 minutes.
  4. Removefrom heat; stir in 2 tablespoons cilantro and2 tablespoons green onions. Season saucewith salt and pepper.
  5. Brush fish all over with 1/4 cup sauce;sprinkle with salt and pepper. Grill fishuntil opaque in center and grill marksappear, 5 to 7 minutes per side, dependingon thickness of fish. Divide coconut sauceamong 4 plates; top with fish.
