Ingredients

  • 1.5 tablespoons fish sauce 
  •  pork chops bone-in thin () (1 1/2 pounds total)
  • teaspoon apple cider vinegar 
  • 0.3 cup coconut milk unsweetened canned
  • 1.5 tablespoons chili paste depending on your taste pref (preferably Thai Kitchen)
  • 0.5 cup roasted peanuts unsalted
  • tablespoons shallots chopped
  • teaspoon sugar 
  • tablespoons water

Directions

  1. sliced cucumber; chopped peanuts; lime wedges
  2. Purée all ingredients except pork in a blender.
  3. Transfer to a small heavy saucepan and bring to a simmer, stirring, over medium-low heat. Thin sauce if desired with 1 to 2 Tbsp water.
  4. Prepare grill for direct-heat cooking over medium-hot charcoal (medium-high heat for gas).
  5. Pat pork dry, then sprinkle all over with 1/2 tsp salt and 1/4 tsp pepper.
  6. Oil grill rack, then grill pork, covered only if using a gas grill, turning once, until just cooked through, about 5 minutes total.
  7. Serve with sauce.
