Ingredients

  • 0.8 teaspoon pepper black divided
  • tablespoon capers 
  • 0.3 cup fat-skimmed beef broth dry white fat-free
  • teaspoons parsley fresh chopped
  •  garlic clove minced
  • teaspoon olive oil 
  • 0.5 cup onion finely chopped
  • ounce pancetta very thinly sliced cut into thin strips
  • 0.8 teaspoon salt divided
  • cups tomatoes chopped ( 2 medium)
  • 24 ounce veal loin chops bone-in
  • 24 ounce veal loin chops bone-in

Directions

  1. Prepare grill.
  2. Heat oil in a nonstick skillet over medium-high heat.
  3. Add onion; saut 3 minutes or until tender.
  4. Add garlic; saut 1 minute.
  5. Add wine; bring to a boil, and cook 2 minutes or until most of liquid evaporates. Stir in tomato, capers, 1/4 teaspoon salt, 1/4 teaspoon pepper, and prosciutto; bring to a boil.
  6. Remove from heat; keep warm.
  7. Sprinkle veal chops with remaining 1/2 teaspoon salt and remaining 1/2 teaspoon pepper.
  8. Place chops on grill rack coated with cooking spray; cover and grill 6 minutes on each side or until desired degree of doneness. Spoon sauce over chops; sprinkle with parsley.
