Ingredients

  • tablespoon thyme sprigs fresh
  •  garlic clove pressed
  • tablespoons brown sugar packed ()
  • teaspoons harissa 
  • tablespoons olive oil extra virgin extra-virgin divided for brushing
  • tablespoons soya sauce 
  • pound beef top sirloin steaks thick fat trimmed ()

Directions

  1. Cut steak lengthwise in half, forming two2- to 3-inch-wide strips.
  2. Cut each stripinto 2- to 3-inch triangles.
  3. Combine 2tablespoons olive oil, garlic, sugar, soysauce, thyme, and 2 teaspoons harissa inlarge bowl; whisk to blend.
  4. Add beef; tossto coat evenly. Marinate 30 minutes at roomtemperature or cover and chill at least 2hours and up to 1 day, tossing occasionally.
  5. Drain beef.
  6. Heat 2 heavy large skilletsover high heat.
  7. Brush skillets generouslywith olive oil. Divide beef tips betweenskillets. Cook until well browned on allsides, turning with tongs, 6 to 7 minutes formedium-rare.
  8. Transfer beef tips to platter.
  9. Whisk remaining 2 tablespoons oliveoil, 1 tablespoon harissa, and 2 tablespoonswater in small bowl to blend well. Seasonsauce to taste with salt.
  10. Drizzle sauce overbeef tips and serve.
