Ingredients

  • ribs celery finely chopped
  • cup apricots dried cut into 1/4-inch pieces
  • large eggs lightly beaten
  • tablespoon parsley fresh chopped
  • tablespoon sage fresh chopped
  • teaspoons thyme leaves fresh
  • cups chicken broth low-sodium
  •  onions finely chopped
  • 0.5 cup pecans toasted coarsely chopped
  • 12 servings salt and pepper 
  • tablespoons butter unsalted (1 stick)

Directions

  1. Preheat oven to 300F.
  2. Spread bread cubes in a flat layer on 2 baking sheets. Toast, stirring often, until dried but not browned, about 20 minutes.
  3. Transfer to a bowl; cool completely. Increase oven temperature to 375F.
  4. Melt butter in a large pan over medium-high heat.
  5. Add onions and celery; saut until softened but not browned, 3 to 5 minutes.
  6. Add sage, parsley and thyme.
  7. Pour in broth, increase heat to high and bring to a boil.
  8. Remove from heat; cool slightly.
  9. Add eggs to bowl with bread cubes; stir to coat.
  10. Pour in broth mixture; stir in apricots and pecans. Season with 1/2 tsp. salt and 3/4 tsp. pepper. Spoon into a greased 3-quart baking dish. (Can be done to this point up to 2 days ahead. Cover and chill. Bring to room temperature before continuing.)
  11. Cover with foil; bake for 30 minutes.
  12. Remove foil; bake 20 minutes.
  13. Let stand for 10 minutes; serve.
