Ingredients

  • cups popped popcorn plain
  • cup roasted peanuts salted
  • 0.8 cup brown sugar light packed
  • tablespoons butter 
  • tablespoons plus light
  • teaspoon baking soda 
  • 0.3 teaspoon salt 
  • teaspoon vanilla

Directions

  1. Heat oven to 200°F. Line cookie sheet with cooking parchment paper.
  2. Place popcorn and peanuts in very large bowl; set aside.
  3. In 2-quart saucepan, heat brown sugar, butter and corn syrup to boiling Boil 5 minutes without stirring.
  4. Remove from heat. Stir in baking soda, salt and vanilla.
  5. Pour caramel mixture over popcorn mixture; toss until well coated.
  6. Spread popcorn mixture evenly on cookie sheet.
  7. Bake 10 minutes. Cool completely before serving.
