Ingredients

  • slices bacon cut into 1-inch pieces
  • lb ground beef 80% lean (at least )
  • 0.5 cup onion chopped
  • 0.5 cup bell pepper chopped (any color)
  • cloves garlic finely chopped
  • 0.5 teaspoon salt 
  • cups water 
  • 14.5 oz tomatoes diced undrained canned
  • 2.3 oz olives ripe drained sliced canned
  • 1.5 teaspoons seasoning italian
  • cups rice white instant uncooked
  • oz mozzarella cheese shredded

Directions

  1. In 12-inch skillet, cook bacon over medium-high heat until almost crisp.
  2. Add beef, onion, bell pepper, garlic and salt; cook 5 to 7 minutes, stirring frequently, until beef is thoroughly cooked; drain.
  3. Stir in water, tomatoes, olives and Italian seasoning; heat to boiling. Stir in rice. Reduce heat to medium; cover and simmer about 5 minutes or until rice is tender.
  4. Sprinkle with cheese; cover and let stand until melted.
