Ingredients

  • 0.5 cup cilantro leaves fresh chopped
  • tablespoon serrano chiles thinly sliced
  • servings available in the asian foods section of some supermarkets and at asian markets 
  • 1.5 pounds ground chicken 
  • teaspoons sriracha in oil
  • 0.3 cup mint leaves fresh chopped
  • cup spring onion thinly sliced
  • tablespoon sugar 
  • 0.8 cup chicken broth canned
  • 0.7 cup juice of lime fresh
  • 0.3 cup fish sauce (nam pla*)
  • 0.8 cup shallots thinly sliced
  • small heads boston lettuce separated
  • tablespoons lemon grass fresh minced

Directions

  1. Whisk first 4 ingredients in medium bowl to blend; reserve sauce.
  2. Bring broth to simmer in heavy large skillet over medium heat.
  3. Add chicken. Simmer until cooked through, breaking up meat with spoon, about 8 minutes.
  4. Add green onions and next 3 ingredients. Stir until vegetables are tender and most of liquid has evaporated, about 4 minutes.
  5. Remove from heat. Stir in sauce, cilantro and mint. Season with salt and pepper.
  6. Spoon into lettuce leaves; serve.
