Ingredients

  • 0.3 cup eggs fat-free
  • tablespoons water 
  • cup baking mix bisquick heart smart®
  • tablespoon lemon zest grated
  • 0.3 teaspoon garlic powder 
  • lb chicken breast boneless skinless
  • 0.7 cup apricot preserves 
  • tablespoons juice of lemon 
  • 0.5 teaspoon soya sauce 
  • 0.3 teaspoon ground ginger 
  • slices optional: lemon

Directions

  1. Heat oven to 425°F. Spray 15x10x1-inch pan with cooking spray. In shallow bowl, beat egg product and water slightly. In another shallow bowl, mix Bisquick mix, lemon peel and garlic powder.
  2. Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/2 inch thick. Dip chicken into egg mixture, then coat with Bisquick mixture.
  3. Place in pan. Spray chicken with cooking spray.
  4. Bake uncovered 20 minutes. Turn; bake 10 minutes longer or until juice is no longer pink when centers of thickest pieces are cut.
  5. Cut chicken crosswise into 1/2-inch slices.
  6. In 1-quart saucepan, mix all remaining ingredients except lemon slices. Cook over medium-low heat until hot, stirring frequently.
  7. Cut chicken crosswise into 1/2-inch slices; pour sauce over chicken.
  8. Garnish with lemon slices.
