  •  angel food cake prepared cut into 1-inch cubes (8 inches)
  • teaspoons juice of lemon 
  • 1.5 teaspoons lemon zest grated
  • 0.3 ounce gelatin mix sugar-free
  • ounces cream cheese cubed reduced-fat
  • 0.5 cup sugar 
  • cup water boiling
  • ounces non-dairy whipped topping divided thawed reduced-fat

Directions

  1. In a small bowl, dissolve gelatin in boiling water. Refrigerate until mixture just begins to thicken, about 35 minutes.
  2. Place cake cubes in a 13-in. x 9-in. dish coated with cooking spray; set aside.

  4. Add gelatin mixture; beat until combined. Fold in 1-1/2 cups whipped topping.
  5. Spread over top of cake, covering completely. Refrigerate for at least 2 hours or until firm.
