Ingredients

  • servings sherry vinegar 
  •  all-beef hot dog 
  • servings kosher salt 
  • tablespoon parsley fresh chopped
  • large heads garlic 
  •  hotdog buns split
  • ounces manchego cheese grated
  • teaspoons olive oil extra virgin extra-virgin divided
  • 0.5 cup roasted peppers diced red drained

Directions

  1. Preheat oven to 400°F.
  2. Place eachhead of garlic, cut side up, in center ofsquare of foil; drizzle each with 1 teaspoonoil. Enclose garlic in foil.
  3. Place packets onoven rack; roast until garlic is tender, about45 minutes. Open packets; cool 15 minutes.
  4. Squeeze garlic cloves into small bowl.Mash enough roasted garlic to measure 1/4cup (reserve remaining garlic for anotheruse).
  5. Transfer 1/4 cup mashed garlic to bowl.
  6. Mix in 3 teaspoons oil, red peppers, andparsley. Season with coarse salt and pepper.
  7. Arrange buns on plates. Topeach with grilled hot dog, then cheese, garlicrelish, and drizzle of vinegar.
