Ingredients

  • teaspoon parsley dried
  •  eggs 
  • servings ground pepper black to taste
  • 0.8 cup parmesan cheese grated
  • pint part-skim ricotta cheese 
  • 5.5 ounces manicotti pasta 
  • servings salt to taste
  • ounces mozzarella cheese shredded
  • 16 ounce spaghetti sauce

Directions

  1. Cook manicotti in boiling water until done.
  2. Drain, and rinse with cold water.
  3. Preheat oven to 350 degrees F (175 degrees C).
  4. In a large bowl, combine ricotta, mozzarella, and 1/2 cup Parmesan, eggs, parsley, and salt and pepper.
  5. Mix well.
  6. Pour 1/2 cup sauce into an 11x17 inch baking dish. Fill each manicotti shell with 3 tablespoons cheese mixture, and arrange over sauce .
  7. Pour remaining sauce over top, and sprinkle with remaining Parmesan cheese.
  8. Bake 45 minutes, or until bubbly.
