Ingredients

  • 0.5  cucumber english thinly sliced into half moons
  • ounces feta cheese crumbled
  • 0.3 cup parsley fresh packed
  • pt grape tomatoes cut in half
  • 0.3 pound olives assorted pitted drained cut in half
  • 16 oz orecchiette 
  •  pepperoncini peppers cut in half lengthwise
  • oz roasted peppers red drained chopped
  • 0.5 pound genoa salami hard cut into strips
  • 1.5 cups balsamic vinaigrette salad dressing with feta, divided

Equipment

    Directions

    1. Cook pasta according to package directions; drain. Rinse with cold running water.
    2. Toss together pasta, salami, and next 4 ingredients.
    3. Add 1 cup vinaigrette, and toss to coat. Cover and chill 2 to 24 hours.
    4. Toss in tomatoes, parsley, and remaining 1/2 cup vinaigrette just before serving.
    5. Sprinkle with feta cheese.
    6. *Penne pasta may be substituted.
