  • teaspoon double-acting baking powder 
  • teaspoon baking soda 
  • 1.5 cups brown sugar packed
  • 0.8 cup butter cubed
  • cup powdered sugar 
  •  eggs 
  • 3.8 cups flour all-purpose
  • teaspoon ground cinnamon 
  • tablespoons half and half 
  • 3.3 cups mincemeat prepared
  • 108  pecans 
  • cup pecans chopped
  • teaspoon rum extract 
  • 0.3 teaspoon salt 
  • 1.5 cups sugar

Directions

  1. In a large bowl, cream butter and sugar. Beat in the eggs.
  2. Add mincemeat; mix well.
  3. Combine the flour, baking powder, baking soda, cinnamon and salt; add to the creamed mixture and mix well. Stir in pecans. Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets.
  4. Bake at 350° for 14-16 minutes or until edges begin to brown.
  5. Remove to wire racks to cool.
  6. For the frosting, combine the brown sugar and butter in a saucepan; bring to a boil over medium heat. Boil for 6-8 minutes, stirring twice, or until the sugar is dissolved.
  7. Remove from the heat.
  8. Add the confectioners' sugar, cream and extract; beat until smooth. Frost the cookies; top each with a pecan half.
