Ingredients

  • 0.3 cup japanese breadcrumbs (panko)
  • oz freshly cheddar cheese shredded divided
  • large eggs lightly beaten
  • medium size apples i use 2 granny smith apples shredded cored peeled
  • lb pd of ground turkey 
  • medium onion shredded
  • 0.8 teaspoon pepper 
  • teaspoon salt

  • kitchen thermometer
  • muffin liners

Directions

  1. Preheat oven to 37
  2. Gently combine ground turkey, next 6 ingredients, and 1/2 cup cheese just until combined, using hands. Spoon turkey mixture into 12 lightly greased muffin cups.
  3. Bake at 375 for 16 minutes.
  4. Sprinkle with remaining 3/4 cup cheese.
  5. Bake 5 minutes or until cheese is melted and a meat thermometer inserted into centers of meatloaves registers 16
  6. *Fine, dry breadcrumbs may be substituted.
  7. Mini Pesto-Turkey Meatloaves: Omit apple and pepper. Substitute mozzarella cheese for Cheddar cheese. Proceed with recipe as directed, stirring 2 Tbsp. chopped fresh basil and 3 Tbsp. refrigerated pesto into meat mixture in Step
  8. Note: For testing purposes only, we used Buitoni Pesto With Basil.
