Ingredients

  • bunches arugula 
  • 1.5 tablespoons peppercorns black crushed
  • tablespoon brandy 
  • tablespoons capers chopped
  • 0.5 cup dijon mustard 
  • 40 small dinner rolls with pepperidge farm country-style soft dinner rolls)
  • tablespoons rosemary leaves fresh chopped
  • clove garlic minced
  • tablespoons horseradish prepared
  • 0.5 cup mayonnaise 
  • tablespoons olive oil 
  • 40 servings toppings: such as pickles sweet thinly sliced
  • pounds pork tenderloin 
  • teaspoon salt

Directions

  1. Combine rosemary, crushed peppercorns, and salt. Rub mixture over tenderloins. Fold thin end under each tenderloin; secure with wooden picks.
  2. Place tenderloins on a lightly greased rack in a broiler pan.
  3. Drizzle with olive oil.
  4. Bake at 375 for 25 to 30 minutes or until a meat thermometer inserted in thickest part registers 160 (medium).
  5. Let stand 5 minutes. Thinly slice tenderloins.
  6. Combine mayonnaise and next 3 ingredients.
  7. Combine mustard and capers. Spoon sauces into separate serving bowls.
