Ingredients

  • tablespoons butter divided melted
  • tablespoons coconut flakes flaked
  • 0.1 teaspoon ground cinnamon 
  • Dash nutmeg 
  • 0.5 teaspoon orange zest grated
  • tablespoon raisins 
  • 0.1 teaspoon salt

Directions

  1. Place the sweet potato in a saucepan; cover with water. Bring to a boil. Reduce heat; cover and cook for 30-40 minutes or just until tender.
  2. Drain; cool slightly and peel.
  3. Place in a bowl; mash. Stir in 1 tablespoon butter, raisins, orange peel, salt, cinnamon and nutmeg.
  4. Transfer to a greased 1-1/2-cup baking dish. Toss coconut with remaining butter; sprinkle over the top.
  5. Bake, uncovered, at 350° for 25-30 minutes or until golden brown.
