  • tablespoon paprika 
  • 0.5 teaspoon salt 
  • 0.5 teaspoon ground cumin 
  • 0.3 teaspoon ground allspice 
  • 0.3 teaspoon ground cinnamon 
  • 1.3 lb chicken breast boneless skinless
  • tablespoon vegetable oil 
  • cups water 
  • teaspoon vegetable oil 
  • 1.5 cups couscous uncooked
  • 0.3 cup raisins 
  • small papaya peeled seeded sliced

Directions

  1. In small bowl, mix paprika, salt, cumin, allspice and cinnamon. Coat both sides of chicken with spice mixture.
  2. In 10-inch skillet, heat 1 tablespoon oil over medium heat. Cook chicken in oil 15 to 20 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (170°F).
  3. Meanwhile, in 2-quart saucepan, heat water and 1 teaspoon oil just to boiling. Stir in couscous; remove from heat. Cover; let stand 5 minutes. Fluff couscous before serving; stir in raisins.
  4. Serve chicken with couscous and papaya.
