Ingredients

  •  bacon cut into 1/2-inch pieces
  • cups broccoli florets fresh
  • 0.3 cup chicken broth 
  • cup mushrooms fresh sliced
  • cup mushrooms fresh sliced
  • 0.5 cup spring onion chopped
  • 0.1 teaspoon pepper 
  • 0.3 teaspoon salt

Directions

  1. In a large skillet, cook bacon over medium heat until crisp.
  2. Remove to paper towels.
  3. Drain, reserving 2 tablespoons drippings.
  4. Saute mushrooms and onions in the drippings for 2-3 minutes or until tender.
  5. Add broth, salt if desired and pepper; bring to a boil. Reduce heat; simmer, uncovered, for 3-4 minutes.
  6. Meanwhile, in a saucepan, bring broccoli and 1 in. of water to a boil. Reduce heat; cover and simmer for 5-8 minutes or until crisp-tender.
  7. Drain.
  8. Add broccoli and bacon to mushroom mixture; toss to coat.
