Not only is this dish elegant enough for a special occasion, but it’s also simple enough to whip up in just 25 minutes, making it a fabulous choice for a cozy lunch or a relaxed dinner after a long day.

The star of this recipe is the fresh, rope-grown mussels, which are tender and flavorful. We elevate their natural taste by sautéing them with sweet, caramelized red onions and aromatic garlic, creating a savory base. The addition of dry cider introduces a unique depth—its fruity notes complement the brininess of the mussels beautifully. This medley is then enriched with half-fat crème fraîche, adding a creamy richness that ties the dish together perfectly.

What’s more, this recipe is gluten-free, allowing everyone to enjoy its rich flavors without the worry of dietary restrictions. Perfectly versatile, Mussels with Red Onion, Cider & Crème Fraîche serves as an impressive main course, ideal for both a romantic dinner setting and casual gatherings with friends. Enjoy this dish with a side of crusty gluten-free bread to soak up that luscious sauce, and allow yourself to be transported to a quaint coastal bistro with every flavorful bite!

Ingredients

  • kg rope-grown mussel
  • 25 butter unsalted
  • small onions red thinly sliced
  •  garlic clove chopped
  • 150 ml cider dry
  • tsp sage finely chopped
  • 150 ml half-fat crème fraîche

Equipment

  • bowl
  • frying pan

Directions

  1. Prepare the mussels. Scrub them to remove any barnacles and pull away the beard, then discard any that are damaged or wont close when tapped.
  2. Melt the butter in a large pan and cook the onions for 3-4 mins, then add the garlic.
  3. Pour the cider over and sprinkle in the sage, then bring to the boil. Turn the heat down to a simmer and cook until reduced by half.
  4. Add the mussels, cover and cook over a medium heat (shaking the pan occasionally) for 3-4 mins until they have opened. Lift the mussels into a bowl and keep warm.
  5. Bubble the cooking liquid in the pan for 2 mins, then carefully blend in the crme frache.
  6. Heat through and pour over the mussels to serve.
