  • large eggs 
  • large basil fresh
  • teaspoon rosemary leaves fresh minced
  • large sage fresh minced
  • 0.3 teaspoon kosher salt 
  • tablespoon olive oil extra virgin extra-virgin
  • cup onion thinly sliced
  • 0.5 cup parmesan finely grated
  • 0.3 cup whole-milk ricotta cheese

Directions

  1. Preheat oven to 400°F.
  2. Whisk first 7 ingredients in a medium bowl;set aside.
  3. Heat oil in a medium ovenproof nonstick skillet overmedium-high heat.
  4. Add onion; saute until soft, about 6 minutes.Reduce heat to low. Stir in egg mixture. Spoon dollops of ricottaevenly over.
  5. Cook until frittata begins to set, about 2 minutes.
  6. Place in oven;bake until just set, 7-9 minutes. Slide the frittata onto a platter.
  7. Cutinto wedges; serve hot or at room temperature.
