Imagine the tantalizing aroma of a perfectly grilled steak wafting through the air, mingling with the earthy scent of burning wood. Over-the-Coals Bistecca Fiorentina is not just a meal; it’s an experience that transports you to the sun-drenched hills of Tuscany. This gluten-free delight features a succulent 2-pound Porterhouse or T-bone steak, seared directly on hot coals, creating a charred crust that locks in the juices and flavors.

What sets this dish apart is its simplicity and the quality of the ingredients. With just a handful of components, including fresh arugula, fragrant thyme, and a drizzle of olive oil, you can elevate your steak to new heights. The vibrant arugula salad, tossed with garlic and lemon juice, adds a refreshing contrast to the rich, meaty flavors of the steak, making each bite a harmonious blend of taste and texture.

Perfect for a weekend gathering or a special dinner, this recipe serves four and is ready in just 45 minutes. Whether you’re cooking over an open fire or on a grill, the result is a mouthwatering main course that will impress your guests and satisfy your cravings. So gather your friends, fire up the grill, and indulge in this unforgettable culinary adventure that celebrates the art of outdoor cooking.

Ingredients

  • 2.5 cups arugula
  • teaspoon thyme dried
  • clove garlic minced
  •  juice of lemon
  • servings pepper black freshly ground
  • tablespoons olive oil plus more for drizzling
  • servings parmesan
  • servings sea salt smoked for garnish
  • pound t-bone steak thick

Equipment

  • oven
  • grill

Directions

  1. Prepare a hot fire in a campfire or wood-fired grill, then let the coals burn down to hot chunks of embers (a 6- to 7-second fire).
  2. Place the steak directly on the hot coals and sear. Turn the steak and season generously with salt and pepper. Cook for 5 to 6 minutes, until the steak is charred on one side and can easily be removed from the coals. Turn and season with more salt, pepper, and the thyme. Cook for 5 to 6 minutes on the second side for medium-rare. If using a grill, the time needed for cooking will be 5 minutes more or so per side since the meat is above the coals rather than in the coals.
  3. Remove from the heat and let rest for 5 minutes.
  4. Toss the arugula with the garlic, the 2 tablespoons olive oil, the lemon juice, and salt to taste.
  5. Carve the steak into 1/4-inch-thick diagonal slices.
  6. Serve immediately, topped with the arugula salad, coarse sea salt or smoked salt, and shavings of Parmesan cheese.
  7. Drizzle with more olive oil if desired.
