  • ounce baby spinach 
  • 0.5 teaspoon pepper black freshly ground
  • tablespoons wine dry white
  • large eggs 
  • large egg whites 
  • tablespoons parsley fresh chopped
  • cup onion finely chopped
  • ounces parmesan fresh grated
  • 0.5 teaspoon salt 
  • ounces pasta like spaghetti gluten-free uncooked
  • slices bacon chopped

Directions

  1. Heat a large nonstick skillet over medium heat.
  2. Add bacon to pan; cook 5 minutes or until crisp, stirring frequently.
  3. Remove bacon from pan, reserving 2 teaspoons drippings in pan; set bacon aside.
  4. Add onion to drippings in pan; cook 3 minutes or until tender, stirring frequently.
  5. Add wine; cook 1 minute or until liquid is reduced by half.
  6. Add spinach; cook 1 minute or until spinach wilts, stirring constantly.
  7. Remove from heat; keep warm.
  8. Cook pasta according to package directions, omitting salt and fat.
  9. Drain well, reserving 1 tablespoon pasta water. Immediately add pasta and reserved pasta water to spinach mixture in pan.
  10. Add reserved bacon; stir well to combine.
  11. Place pan over low heat.
  12. Combine cheese and next 4 ingredients, stirring with a whisk.
  13. Add to pasta mixture, tossing well to coat. Cook 1 minute.
  14. Remove from heat.
  15. Sprinkle with parsley.
  16. Serve immediately.
