  • 5 cups asparagus 1-inch
  • 9 ounce fettuccine barilla fresh
  • 2 tablespoons juice of lemon fresh
  • 2 teaspoons lemon rind grated
  • 2 teaspoons olive oil 
  • 0.5 teaspoon oregano dried
  • 3 ounces parmesan cheese fresh grated
  • 4 ounces pancetta very thin coarsely chopped
  • 0.3 teaspoon salt

Directions

  1. Cook pasta according to package directions, omitting salt and fat.
  2. While pasta cooks, heat oil in a large nonstick skillet over medium heat.
  3. Add asparagus and next 4 ingredients (asparagus through salt). Cover and cook 5 minutes or until tender, stirring occasionally. Stir in prosciutto; cook, uncovered, for 1 minute.
  4. Combine asparagus mixture, pasta, and cheese in a large bowl, tossing to coat.
