  • ounce cheese tortellini fresh (such as DiGiorno)
  • large garlic cloves finely chopped
  • teaspoon olive oil 
  • ounce preshredded parmesan cheese 
  • tablespoon pinenuts 
  • ounces pancetta thinly sliced

Directions

  1. Cook pasta according to the package directions, omitting salt and fat; drain.
  2. Transfer pasta to a large bowl.
  3. Heat a large nonstick skillet over medium heat.
  4. Add nuts to pan; cook 1 1/2 minutes or until toasted, stirring occasionally.
  5. Add nuts to bowl.
  6. Heat oil in pan over medium heat.
  7. Add garlic to pan; cook 2 minutes, stirring occasionally.
  8. Add spinach to pan; cook 2 minutes or until spinach wilts, stirring constantly.
  9. Add spinach mixture, cheese, and remaining ingredients to bowl; toss well.
