Ingredients

  • teaspoon pepper black freshly ground
  • tablespoon mint leaves fresh minced
  • tablespoons parsley fresh minced
  • tablespoons green onions thinly sliced
  • tablespoon juice of lemon 
  • tablespoons parmesan cheese grated
  • cup part-skim ricotta cheese 
  • pound penne pasta) (tube-shaped uncooked
  • teaspoon salt 
  • tablespoon stick margarine melted

Directions

  1. Combine first 8 ingredients in a large bowl; set aside.
  2. Cook pasta according to package directions, omitting salt and fat.
  3. Drain the pasta in a colander over a bowl, reserving 1/2 cup cooking liquid.
  4. Add 1/2 cup cooking liquid to the ricotta mixture; stir until mixture is well-blended.
  5. Add the pasta to the ricotta mixture; toss well.
  6. Sprinkle with Parmesan.
