Welcome to a culinary adventure with our delightful Pesce Per Due, a dish that beautifully showcases the delicate flavors of branzino while being both gluten-free and dairy-free. Perfect for a romantic dinner or a special lunch, this recipe is designed for two, making it an ideal choice for couples looking to impress each other with a home-cooked meal.

Imagine the aroma of fresh herbs and citrus wafting through your kitchen as you prepare this exquisite main course. The branzino, a prized Mediterranean fish, is not only a feast for the eyes but also a source of lean protein, making it a healthy option for any meal. The unique cooking method, encased in a salt crust, ensures that the fish remains moist and flavorful, while the herbs infuse it with a fragrant essence that will tantalize your taste buds.

In just 45 minutes, you can create a restaurant-quality dish that will leave your guests raving. The combination of egg whites and fine sea salt forms a protective shell that locks in moisture, resulting in a tender and flaky texture. Serve it alongside a fresh salad or your favorite vegetables for a complete dining experience. Get ready to elevate your cooking game and enjoy a memorable meal with Pesce Per Due!

Ingredients

  • pound branzino cleaned
  • 0.5 cup egg whites ( 4)
  • clove garlic
  • slices optional: lemon
  •  parsley
  • sprigs rosemary
  • cups sea salt fine

Equipment

  • bowl
  • baking paper
  • oven
  • baking pan

Directions

  1. Preheat oven to 400°F.
  2. In a bowl, combine the sea salt and the egg whites and mix well. The mixture should feel like wet sand.
  3. Rinse and pat fish dry. Stuff the cavity of the fish with the rosemary, parsley stems, garlic, and lemon slices.
  4. Sprinkle baking tray with sea salt. Trim a piece of parchment paper in the shape of the branzino, making the paper 1 inch larger all around than the fish.
  5. Place the fish on the parchment-lined tray and cover with the salt mixture, packing down tightly.
  6. Place the tray in the oven and cook for 17 to 19 minutes. (When done, the salt should be golden brown around the edges.)
