  • 1.5 pounds extra-lean ground round 
  • 0.5 teaspoon ground pepper red
  • 0.8 cup italian-seasoned breadcrumbs 
  • teaspoon penzey's southwest seasoning dried italian
  • 0.5 cup onion chopped
  • ounce part-skim mozzarella cheese 
  • 0.7 cup pizza sauce divided
  • 0.5 cup bell pepper diced red
  • 0.3 teaspoon salt 
  • teaspoon worcestershire sauce

Directions

  1. Preheat oven to 35
  2. Combine 1/3 cup sauce, meat, and next 8 ingredients (sauce through egg white) in a bowl. Shape meat mixture into an 18 x 12-inch rectangle on wax paper. Arrange cheese slices over meat mixture; sprinkle with red bell pepper, leaving a 1-inch border.
  3. Roll meat mixture up jelly-roll fashion starting at short side. Pinch ends to seal.
  4. Place meat loaf on a broiler pan coated with cooking spray.
  5. Bake at 350 for 1 hour or until meat loaf registers 16
  6. Brush 1/3 cup pizza sauce over meat loaf.
  7. Bake an additional 5 minutes or until done; let stand 10 minutes before slicing.
