Ingredients

  • ounces torn bibb lettuce 
  • 0.3 teaspoon pepper black freshly ground
  •  peppercorns black
  • tablespoons chervil fresh chopped
  • teaspoons dijon mustard 
  • cups cooking wine dry white
  • teaspoons optional: dill fresh chopped
  • tablespoon parsley fresh chopped
  • slices optional: lemon 
  • teaspoon juice of lemon fresh
  • 0.5 cup mayonnaise low-fat
  •  parsley sprigs 
  • 24 ounce salmon fillet skinless ()
  • 0.3 teaspoon salt 
  • tablespoons shallots sliced
  • 0.3 cup sorrel leaves fresh chopped
  • 0.3 cup cup heavy whipping cream fat-free sour
  • cups sugar snap peas trimmed
  • cups water

Directions

  1. To prepare salmon, combine the first 6 ingredients in a large skillet; bring to a boil.
  2. Add fish to pan. Cover, reduce heat, and simmer 10 minutes (fish may not be completely cooked).
  3. Remove from heat.
  4. Let stand, covered, 10 minutes.
  5. Remove fish from pan with a slotted spoon; place on a dish. Cover and chill. Discard cooking liquid.
  6. To prepare sauce, combine mayonnaise and next 9 ingredients (through pepper) in a small bowl; cover and chill.
  7. Cook peas in boiling water 1 minute or until crisp-tender.
  8. Drain and rinse with cold water; drain. Arrange 2 cups of lettuce and 3/4 cup peas on each of 4 plates. Top each serving with 1 salmon fillet and about 3 tablespoons sauce.
