Ingredients

  • lb pork loin boneless trimmed of fat cut into 3/4-inch cubes
  • 15.5 oz great northern beans rinsed drained canned
  • 14.5 oz tomatoes diced undrained canned
  • cup chicken broth (from 32-oz carton)
  • teaspoons chili powder 
  • tablespoon olive oil 
  • cup onion chopped
  • teaspoon orange zest grated
  • 0.5 teaspoon pepper 
  • teaspoon salt 
  • medium sweet potatoes and into peeled cut into 3/4-inch cubes ( 3 cups)

Directions

  1. In 4-quart saucepan, heat oil over medium-high heat. Cook onion in oil about 2 minutes, stirring frequently, until tender.
  2. Add pork and chili powder; cook and stir about 4 minutes or until pork is no longer pink.
  3. Stir in remaining ingredients. Reduce heat to medium-low. Cover and simmer 15 to 20 minutes or until sweet potatoes are tender.
