Ingredients

  • small onion chopped
  • small bell pepper green chopped
  • 0.3 cup canola oil 
  • pounds dressed rabbit cut into pieces
  • 0.5 pound andouille smoked halved cut into 1/4-inch slices
  • teaspoon salt 
  • 0.5 teaspoon thyme dried
  • 0.3 teaspoon pepper 
  • 0.3 teaspoon ground pepper 
  • 0.5 cup okra sliced
  • serving rice hot cooked

Directions

  1. In a Dutch oven, saute onion and green pepper in oil until tender.
  2. Add rabbit and enough water to cover. Cover and simmer for 1-1/2 to 2 hours or until meat is very tender.
  3. Add the sausage, salt, thyme, pepper and cayenne. Simmer, uncovered, for 15-20 minutes.
  4. Remove rabbit. When cool enough to handle, remove meat from bones; discard bones.
  5. Cut meat into bite-size pieces; return to pan. Stir in okra; bring to a boil.
  6. Serve in bowls over rice.
