Ingredients

  • cups rice 
  • tablespoons canola oil 
  •  cinnamon sticks 
  • tablespoons golden raisins 
  • 0.5 medium onion sliced into fine half rings
  • teaspoon salt 
  • tablespoons blanched slivered almonds 

Equipment

  • frying pan
  • sieve

Directions

  1. Put the rice in a bowl. Wash in several changes of water.
  2. Drain.
  3. Let therice soak in water that covers it generously for 30 minutes.
  4. Drain through asieve and leave in the sieve suspended over a bowl to drip.
  5. Pour the oil into a heavy, medium pan (that has a tight-fitting lid) and setover medium-high heat. When hot, put in the cinnamon.
  6. Let it sizzle for10 seconds. Put in the onions. Stir and fry the onions until they start tobrown.
  7. Add the almonds. Stir until they are golden.
  8. Add the raisins. Stir untilthey are plump, just a few seconds.
  9. Add the drained rice and salt. Stir verygently to mix.
  10. Add 2 2/3 cups water and bring to a boil. Cover tightly, turn heatto very, very low, and simmer gently for 25 minutes.
