Ingredients

  • 16 jumbo elbow pasta uncooked
  • 1.3 cups ricotta cheese 
  • 0.5 cup powdered sugar 
  • 1.5 teaspoons vanilla 
  • 1.5 cups non-dairy whipped topping frozen thawed ()
  • 0.3 cup semisweet chocolate chips miniature
  • 0.3 cup pecans toasted chopped
  • cup mrs richardson's butterscotch caramel sauce warmed

Directions

  1. Cook and drain pasta as directed on package; pat dry. Meanwhile, beat cheese, powdered sugar and vanilla in medium bowl with electric mixer on medium speed about 3 minutes or until light and creamy. Fold in whipped topping. Fold in chocolate chips and pecans.
  2. Spoon about 2 1/2 tablespoons cheese mixture into each pasta shell.
  3. Place in shallow container. Cover with plastic wrap and refrigerate about at least 2 hours but no longer than 8 hours.
