  • 3.8 pound cornish game hens trimmed
  • 1.5 teaspoons pepper fresh black
  • 0.3 cup currant jelly 
  • 0.5 teaspoon salt 
  • 0.3 cup spicy brown mustard

Directions

  1. Preheat oven to 40
  2. Remove and discard giblets and necks from hens. Split hens in half lengthwise.
  3. Place hen halves, breast sides up, in a roasting pan coated with cooking spray.
  4. Combine mustard and jelly.
  5. Brush mustard mixture over hens; sprinkle evenly with pepper and salt.
  6. Bake at 400 for 30 minutes or until a thermometer inserted in the meaty part of thighs registers 16
  7. Let stand 10 minutes.
