Ingredients

  • 0.3 cup crème fraîche 
  • 0.5 cup t brown sugar dark packed ()
  • tablespoons honey 
  • tablespoons mint leaves fresh
  • 0.5 cup orange juice 
  • medium pineapple cored ripe peeled cut lengthwise into 8 wedges
  • 0.3 cup pistachios unsalted coarsely chopped

  1. Preheat oven to 450°F. Line a large rimmedbaking sheet with parchment paper. Stirfirst 3 ingredients in a large bowl until sugardissolves.
  2. Add pineapple; toss to coat.

  4. Place pineapple, one flat sidedown, on prepared sheet; reserve marinade.
  5. Roast pineapple for 15 minutes. Turn,brush with marinade, and roast until tenderand caramelized, 10-15 minutes.
  6. Drizzleremaining marinade over; let cool slightly.
  7. Divide pineapple among plates. Spooncrème fraîche alongside.
  8. Garnish with nutsand mint.
