  • 1.3 cups sugar 
  • ounces spicy tofu firm cubed reduced-fat
  • 0.8 cup cocoa unsweetened
  • 0.3 cup walnuts divided chopped

Directions

  1. Preheat oven to 37
  2. Lightly spoon flours into dry measuring cups, and level with a knife.
  3. Combine flours, cocoa, baking powder, and salt in a large bowl.
  4. Combine sugar, tofu, soy milk, and butter in a food processor or blender, and process until smooth.
  5. Add to flour mixture, stirring just until moist. Stir in 2/3 cup marshmallows and 1/4 cup walnuts.
  6. Spread the batter into a 9-inch square baking pan coated with cooking spray.
  7. Sprinkle with the remaining marshmallows and walnuts.
  8. Bake at 375 for 25 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 5 minutes.
  9. Cut into squares.
  10. Note: Soy flour and soy milk are often available in health-food stores and some supermarkets.
