Indulge in the rich and creamy delight of She Crab Soup, a Southern classic that promises to elevate your dining experience. Perfect for a cozy lunch or an elegant dinner, this dish showcases the sweet, succulent flavors of fresh crab meat, complemented by a medley of aromatic vegetables and a hint of sherry. With its velvety texture and luxurious taste, She Crab Soup is not just a meal; it’s an experience that transports you to the coastal shores of the South.

The heart of this recipe lies in the meticulous blend of ingredients that create a symphony of flavors. The combination of crab boil seasoning and fresh herbs infuses every spoonful with a delightful complexity, while the buttery roux adds a rich depth that makes the soup irresistibly smooth. Topped with a touch of crab roe or sea urchin roe, this soup is a feast for both the eyes and the palate.

Ingredients

  • cup medium-diced carrots
  • cup medium-diced celery
  • tablespoons crab boil seasoning (recommended: Old Bay)
  • pounds crab meat
  • cup flour all-purpose
  • 0.3 cup parsley fresh minced
  • tablespoon garlic minced
  • quarts heavy cream
  • cup medium-diced onions
  • ounces sea urchin roe (uni)
  • cups cooking sherry
  • quart lobster stock
  • pound butter unsalted divided

Equipment

  • sauce pan
  • whisk
  • pot
  • hand mixer

Directions

  1. In heavy saucepan or stock pot over medium-high heat, add 3/4 pound butter, carrots, celery, onions, and garlic and cook until the vegetables have begun to brown, 10 to 12 minutes. Deglaze with the sherry, and stir and scrape up any bits. Once deglazed, add the flour and stir into the butter to create a roux. Once well mixed, add the stock and cream, reduce the heat to medium-low, and cook for 25 minutes, stirring throughout to ensure the soup does not scorch.
  2. Pulse the soup with a hand mixer to mince the vegetables.
  3. Add the crab boil seasoning, crab roe, and parsley and continue to cook for 10 minutes.
  4. Remove the soup from heat, whisk in the remaining 1/4 pound butter, and stir in the crab meat.
