  • 0.8 cup bell pepper red (1 x)
  • 0.8 cup bell pepper yellow (1 x)
  • cups rice hot cooked
  • cups rice hot cooked

  • tablespoon cornstarch 
  • 0.3 teaspoon pepper red crushed
  • tablespoon ginger fresh minced peeled
  •  garlic clove minced
  • cup spring onion coarsely chopped
  • tablespoons juice of lemon fresh
  • tablespoons soy sauce low-sodium
  • tablespoon rice vinegar 
  • 0.3 teaspoon salt 
  • pound chicken breast cut into 1/4-inch-wide strips
  • tablespoons vegetable oil 
  • 0.5 teaspoon pepper white

Directions

  1. Combine the first 5 ingredients in a medium bowl; add chicken. Cover and marinate in refrigerator 30 minutes.

  3. Add chicken mixture, and saut 2 minutes. Stir in bell peppers, lemon juice, white pepper, and salt; cook 1 1/2 minutes or until chicken is done.
