Ingredients

  • 24  melba rounds 
  • tablespoons neufcha@gtel cheese softened
  • teaspoon dijon mustard 
  • tablespoon parsley fresh finely chopped
  • teaspoon jalapeno finely chopped
  • tablespoon cheddar cheese shredded reduced-fat
  • 0.3 cup nonfat cottage cheese 
  • large shrimp fresh unpeeled
  • cups water

Directions

  1. Bring water to a boil in a medium saucepan; add shrimp, and cook 3 to 5 minutes or until shrimp turns pink.
  2. Drain well; rinse with cold water. Peel and devein shrimp. Finely chop shrimp, and set aside.
  3. Position knife blade in a miniature food processor bowl; add cottage cheese, Neufcha@Gtel cheese, and mustard. Process 1 minute or until smooth, stopping once to scrape down sides.
  4. Transfer mixture to a small bowl. Stir in shrimp, Cheddar cheese, parsley, and jalapeno pepper. Cover and chill thoroughly.
  5. Serve with Melba rounds.
