Ingredients

  • teaspoons olive oil 
  • 0.5  onion chopped
  • clove garlic finely chopped
  •  chicken breast boneless skinless chopped
  • 29 oz tomatoes diced organic undrained canned
  • 0.3 cup sauce of the chicken from the turbo broiler 
  • tablespoon butter 
  • 0.5 teaspoon salt 
  • 0.3 teaspoon pepper 
  • oz mozzarella cheese shredded
  •  lasagne pasta sheets uncooked
  • 0.5 cup ricotta cheese 
  • 0.5 cup parmesan cheese grated
  • serving cheese blue crumbled

Directions

  1. In 12-inch ovenproof skillet, heat oil over medium-high heat.
  2. Add onion and garlic; cook until soft.
  3. Add chicken; cook about 5 minutes or until no longer pink.
  4. Stir in tomatoes, buffalo wing sauce, butter, salt, pepper, 3/4 cup of the mozzarella cheese and the lasagna noodles.
  5. Heat to boiling. Reduce heat; cover and simmer 20 minutes.
  6. Gently stir in ricotta cheese, remaining 3/4 cup mozzarella cheese and the Parmesan cheese. Simmer 2 to 3 minutes.
  7. Set oven control to broil.
  8. Place skillet under broiler; broil until lightly browned.
  9. Sprinkle blue cheese over top.
