Ingredients

  • oz asparagus thin
  • tablespoons cream cheese softened reduced-fat (Neufchâtel)
  • 0.5 teaspoon dill dried
  • teaspoon lemon zest grated
  • teaspoon juice of lemon 
  •  bagels cut in half horizontally
  • 1.5 oz salmon (from 3-oz package)
  • serving lemon wedges 

Equipment

  • sauce pan
  • steamer basket

Directions

  1. Break off tough ends of asparagus as far down as stalks snap easily.
  2. Cut asparagus in half crosswise into about 3-inch pieces. In 3-quart saucepan or skillet, place steamer basket in 1/2 inch water.
  3. Place asparagus in basket.
  4. Heat to boiling; reduce heat. Cover; steam about 5 minutes or until crisp-tender. Immediately plunge asparagus into ice water until cold.
  5. Drain on paper towels.
  6. In small bowl, mix cream cheese, dill weed, lemon peel and lemon juice until well blended.
  7. Spread on cut sides of bagel halves.
  8. Arrange asparagus pieces on cream cheese mixture; top with salmon.
  9. Serve with lemon wedges.
