With a total cook time of just 45 minutes, it's also great for busy weeknights or when you're expecting a crowd.

This salad starts with a base of 3.5 cups of cooked wild rice, which is packed with fiber and essential nutrients. It's then loaded with juicy green grapes, providing a sweet and tangy contrast to the rich, savory chicken. For an extra touch of crunch and nuttiness, feel free to add pecans to the mix. The star of the show, however, is the homemade orange dressing, made from Smucker's® Sugar Free Orange Marmalade, raspberry vinegar, and a hint of grated orange rind. This dressing not only adds a vibrant pop of color but also infuses the salad with a refreshing citrus note that ties all the flavors together.

To make this salad, you'll start by searing the chicken breasts in a skillet until they're golden brown, then finish them in the oven until cooked through. Once cooled, slice the chicken into strips and mix it with the rice, grapes, and pecans. The dressing is whisked together in just a few minutes, and then poured over the chicken mixture for a final toss. Serve it up on lettuce-lined plates for a stunning presentation that's perfect for lunch, dinner, or a main course at any occasion.
