Ingredients

  • 64 oz chicken broth (8 cups total)
  • large onion chopped
  • cloves garlic crushed
  •  pork hock smoked
  • lb collard greens fresh washed trimmed
  • teaspoon salt 
  • 0.8 teaspoon pepper 
  • tablespoons vinegar white

Directions

  1. In 10-quart stockpot or Dutch oven, heat broth over medium-high heat.
  2. Add onion, garlic and ham hock.
  3. Heat to boiling.
  4. Carefully add collards greens, one bag at a time. Once greens have wilted, stir in salt, pepper and vinegar.
  5. Cover; cook 1 hour 30 minutes to 2 hours or until greens reach your desired tenderness.
  6. Remove ham hock.
  7. Remove ham from bone; discard bone. Shred ham; return to stockpot and stir.
