Ingredients

  • medium avocado peeled cut into 1/2-inch cubes
  • 14.5 oz tomatoes diced with jalapeños, drained canned
  • tablespoons apple cider vinegar 
  • tablespoon cilantro leaves fresh chopped
  • 0.5 teaspoon ground cumin 
  • 0.3 cup olive oil 
  • 0.5 cup olives ripe sliced
  • boxes ranch & bacon pasta salad mix betty suddenly salad®
  • oz pepper jack cheese cut into 1/2-inch cubes (2 cups)
  • tablespoons hot sauce red
  • 15 oz pinto beans black rinsed drained canned
  • leaves the of 1 cos lettuce 
  • 0.5 cup water cold
  • 11 oz corn whole with red and green peppers, drained canned
  • 0.5 cup bell pepper green red yellow chopped

Directions

  1. Empty Pasta mixes into 4-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally.
  2. Meanwhile, in large bowl, stir together Seasoning mixes, cold water, olive oil, vinegar, cilantro, pepper sauce and cumin.
  3. Drain pasta; rinse with cold water. Shake to drain well.
  4. Add pasta, beans, tomatoes, corn, olives, bell pepper, avocado and cheese to seasoning mixture; toss gently to coat. If desired, serve on a platter lined with lettuce leaves.
  5. Serve immediately, or cover and refrigerate until serving.
