Ingredients

  • 0.8 cup avocado diced peeled ( 1 medium)
  • 0.5 teaspoon pepper black
  • 16 ounce great northern beans rinsed drained canned
  • cups chicken breast boneless skinless chopped
  • cups fat-skimmed beef broth fat-free
  • 0.5 cup cilantro leaves fresh coarsely chopped
  •  garlic clove minced
  • teaspoon ground cumin 
  • tablespoon juice of lime fresh
  •  lime wedges 
  • cup onion chopped
  • 0.3 teaspoon salt 
  • cup tomatoes seeded chopped
  • 0.3 cup rice white uncooked

Directions

  1. Heat a large saut pan over medium-high heat. Coat pan with cooking spray.
  2. Add onion and garlic, and saut 3 minutes.
  3. Add broth, rice, cumin, and beans; bring to a boil. Reduce heat; simmer 15 minutes. Stir in chicken, cilantro, pepper, and salt; simmer 5 minutes or until chicken is thoroughly heated.
  4. Remove from heat, and stir in tomato, avocado, and juice.
  5. Serve with lime wedges.
