  • teaspoon anchovy paste 
  • servings chili croutons 
  • teaspoons chipotle peppers in adobo sauce minced
  • tablespoons cider vinegar 
  • tablespoons egg substitute 
  •  garlic clove 
  • tablespoon juice of lemon fresh
  • 0.3 cup olive oil 
  • 0.5 cup parmesan cheese freshly grated
  •  bell pepper red thinly sliced
  • 10 ounce torn romaine lettuce 
  • 0.3 teaspoon salt 
  • pound shrimp deveined cooked peeled
  • teaspoon worcestershire sauce 
  •  bell pepper yellow thinly sliced

Directions

  1. Combine first 4 ingredients in a large bowl; set aside.
  2. Process olive oil and next 9 ingredients in a blender until smooth, stopping to scrape down sides.
  3. Add cheese, and process until blended.
  4. Just before serving, pour dressing over salad mixture, tossing to coat. Divide salad mixture among 4 individual plates or containers.
  5. Sprinkle evenly with Chili Croutons.
  6. Note: If preferred, substitute 1 pound baked or grilled chicken breast slices for the shrimp.
