  •  spring onion chopped
  • 0.5 cup olive oil 
  • large onion thinly sliced
  • 0.5 pound potatoes thinly sliced
  • servings salt and pepper to taste
  •  tomatoes peeled seeded coarsely chopped

Directions

  1. In a large frying pan or skillet, heat olive oil over medium-high heat.
