  •  bacon diced
  • tablespoon canola oil 
  • medium onion chopped
  • cup rice long grain uncooked
  • cup rice long grain uncooked
  • 1.8 cups water 
  • large tomatoes chopped
  • medium bell pepper green chopped
  •  jalapeno seeded chopped
  • teaspoons chili powder 
  • 0.5 teaspoon salt

Directions

  1. In a large skillet, cook bacon over medium heat until crisp.
  2. Remove to paper towels.
  3. Add oil to the drippings; saute onion for 3 minutes.
  4. Add rice; stir until golden brown, about 5 minutes. Stir in the remaining ingredients. Bring to a boil.
  5. Reduce heat; cover and simmer for 30 minutes or until rice is tender.
  6. Sprinkle with bacon.
